Part of National Campaign at Ruby Tuesday

Story by Courtney Dunn

MORGANTOWN  -- A popular restaurant chain is "going green” across the country and in Morgantown.

Ruby Tuesday celebrated Earth Day this year with a number of new initiatives.

One of the biggest changes is to the restaurant's signature salad bar. Ruby Tuesday will reduce its landfill waste by 320 tons a year, by asking salad dressing vendors to repackage their products.

It's also printing menus on Mohawk paper, made with wind-generated electricity, and using soy ink.

The small changes really add up at the 950 locations and customers say they're excited.

"I think that it's very impressive that such a large chain is doing something to help the environment," said Stephanie Sines, "because they could really make a big difference because they have a lot of influence, a lot of stores, a lot of restaurants."

Ruby Tuesday has also launched a web site dedicated to its green initiative. Just click on the link below.
